I created “Bean Night”, a once weekly meal featuring inexpensive protein-rich foods, 10 years ago when Philippe and I were on a very tight budget (with business school tuition to pay and a baby on the way). In this blog post, I share the secrets to “Bean Night” success, which is not only about beans, (although delicious in their own right!) but rather creating nutritious dinners using simple (and cheap!) ingredients like eggs, whole grain pasta and canned fish while also learning tricks to stretch and elevate ingredients.
