I’ve found that as the weather heats up, there is a shift in my cooking. As opposed to winter cooking – which is focused around the meat I’m cooking that night – in the summertime, I find myself creating meals based around vegetables, and keeping my protein uber-simple. My summertime weeknight formula keeps the stress of meal planning at bay:
2 or 3 veggie dishes + simply grilled protein + quinoa, rice or a crusty loaf of bread.
