In this week’s “Healthy Plate” column, I’m talking about a quick, no-frills, but still totally delicious dinner dish.
Dark chicken meat is more forgiving than the leaner, lighter breast. Your cooking time doesn’t have to be perfect to yield a perfectly juicy piece of meat – and I really appreciate that level of forgiveness on busy weeknights when my husband and I are both working and my girls are all at a different activity after school. My Weeknight Lemon Chicken Dinner-In-A-Bag allows you to do all the work ahead of time, then dump all of the ingredients onto a pan and cook them 40 minutes before dinner time. Doesn’t get much easier than that!
