1 tablespooon melted butter or vegetable or coconut oil
1 Tablespoon honey or sugar
½ teaspoon vanilla extract
½ cup flour
½ teaspoon baking powder
Preheat oven to 350. In a medium bowl, mix up the yogurt, egg, oil and vanilla with a fork until well-blended. Add the flour on top and sprinkle the baking powder and salt over the flour, and mix again until blended. Scoop into mini-muffin tin, lined with paper muffin cups. Bake for 12 minutes or until cake springs back to light touch.
