Fast roasted baby potatoes

1pound small baby potatoes or fingerling potatoes
2 teaspoons olive oil
1 teaspoon granulated garlic
salt and pepper
Instructions:

Heat the oven to 400.  Toss the potatoes with the oil, garlic, salt and pepper, and place in a microwave safe dish.  Microwave for 4-5 minutes, or until potatoes begin to soften.  Transfer hot potatoes to a baking sheet lined with foil and place in the oven, and roast until tender, about 15 minutes.   Add salt if needed.
