Italian Antipasti Quinoa

2 cups cooked quinoa
½ cup chopped marinated artichoke hearts
¼ cup chopped roasted red peppers
¼ cup chopped salami
½ cup cubed mozzarella cheese (or chopped cheese sticks)
½ cup chopped tomato
½ cup chopped cucumber
2-3 tablespoons chopped shallot
¼ cup red wine vinegar
¼ cup olive oil
1 teaspoon granulated garlic
chopped parsley
salt and pepper
Instructions:

Mix everything in a bowl and serve at room temperature or chilled.

4-6 servings
