Quick Garlic and Lemon Spinach Sauté

4 cups baby spinach, washed
1 tablespoon olive oil
1 tablespoons lemon zest
¼ teaspoon red pepper flakes
3 cloves garlic, smashed
1 tablespoon water or lemon juice
salt and pepper
Instructions:

Heat a large sauté pan over medium heat.  Add the olive oil, lemon zest, red pepper flakes and garlic and stir for 30 seconds until fragrant.  Add the spinach and saute for one minute, stirring.  Add a tablespoon of water (or lemon juice), stir and then cover the pan to allow to steam for one minute.  Uncover, stir the spinach another minute or two.  Season with salt and pepper and serve.
